Sustainable farmer takes over Voyager Estate

Liebherr was excited to be a part of the Voyager Estate first In Residence event featuring River Cottage Australia’s chef, Paul West. Taking over the Margaret River Estate’s kitchen for two exclusive dinners, Paul matched the 3-course meal together with wines from the Voyager Estate (the wine was stored in a Liebherr Freestanding Wine Cellar).

Paul had guests in fits of laughter as he shared stories of his time on River Cottage Australia, while reinforcing his food philosophies around eating sustainably by growing your own food and utilising local produce.

As a qualified chef who has worked as a fruiterer, a chef at Melbourne’s highly acclaimed Vue de Monde restaurant, and as a tv chef, Paul is the poster boy for organic food and sustainable farming. His passion led him to transform a 20-acre former dairy property into a self-sufficient sustainable farm with livestock and a flourishing fruit and vegetable garden.

Voyager Estate shares Paul’s philosophies, with a focused effort on supporting local farmers and suppliers, utilising seasonal produce and creating their very own kitchen garden, supplying up to 90% of the vegetables in their 6-course Discovery Menu.

With two successful evenings attended by 94 guests, we can all take a leaf out of Paul’s way around the kitchen and his dedication to ‘real food’.
