Ingredients:
1/2 cup thin Vermicelli
2 tablespoons Ghee
2½ cups Milk
3-4 tablespoons Sugar
1/2 teaspoon Cardamom Powder
1/2 tablespoon Raisins, optional
1 tablespoon chopped Cashew nuts
1 tablespoon chopped Almonds
Rose Petals (to garnish)
Chopped pistachios (to garnish)
Preparation:
Step 1/8
Heat 1 tablespoon of ghee in a heavy-bottomed pan over medium heat. Add the thin vermicelli.

Stir constantly and roast the vermicelli until it turns golden brown. Make sure to stir well to evenly roast all the strands. Once done, transfer the vermicelli to a plate.

In the same pan, heat another tablespoon of ghee and roast the cashew nuts and almonds until they turn light brown. Then, transfer them to a plate.

Boil milk in the same pan or a different one over medium heat.

Once the milk starts boiling, add the roasted vermicelli. Stir well and cook for about 5-7 minutes, or until the vermicelli is soft. Continue stirring to avoid overcooking.

Add sugar, raisins, and cardamom powder. Stir until the sugar dissolves completely.

Cook for an additional 2-3 minutes, then turn off the heat. Transfer the kheer to a large serving bowl and garnish with chopped pistachios and rose petals.

You can serve the kheer hot or store it in the refrigerator for 1-2 hours to chill before serving, based on your preference.
