Prepare the pumpkin, a large knife, a small knife and a spoon.

Halve the pumpkin with a sharp knife.

Use a spoon to remove the seeds and coarse fibres.

Place the halves on the work surface.

Cut the pumpkin into wedges.

Peel the wedges with a small knife.

Cut into pieces at will.

Cut any big wedges into smaller pieces.

Put aside dice and wedges for further use.

Preheat the oven to 180°C (160°C fan, gas 4). Brush a baking tray with oil and place the wedges on top. Drizzle with more oil and season with salt and pepper. Wash, halve, deseed and finely chop the chilli. Mix with the herbs and scatter over the pumpkin wedges.

Bake in the oven for 30 minutes until golden brown.

Remove from the baking tray and serve.
