Plunge the tomatoes into boiling water, then peel, halve and core.

Cut the tomatoes into small cubes, place in a bowl, add salt and pepper and mix with some olive oil.

Cut the bread slices in half and place on 2 baking sheets side by side. Preheat the grill to high.

Peel the garlic and halve lengthways.

Cook the bread slices in the oven for 2-4 minutes, turning once.

Remove the bread from the oven and rub it with the garlic while still hot.

Drizzle the toasted bread slices with olive oil.

Spread out the tomato cubes evenly with a fork.

Season lightly with salt and pepper.

Wash the basil leaves, shake dry and cut into fine strips. Sprinkle over the bruschetta and serve immediately.
