Pour the boiling water over the noodles and cook according to the pack instructions.

Wash the shrimps in a sieve and let them drain.

Wash the peppers, halve and deseed. Cut into thin strips.

Slice the halves again and cut diagonally into thin strips.

Wash the spring onions and cut diagonally into rings.

Cut diagonally into rings.

For the dressing, mix together the curry paste and 2-3 tbsp cold water in a bowl.

Squeeze the juice of the lime.

Mix the lime juice, fish sauce and oil into the dressing.

Drain the noodles well and cut into shorter lengths with scissors.

Step: 11/13

In a salad bowl, toss together the prawns, peppers and spring onions.

Wash the coriander, shake dry and add the leaves to the salad.

Pour over the dressing, mix well and serve.
