Wash the prawns and drain in a sieve.
Wash and halve the chillies, deseed and chop finely.
Wash the lemon under hot water and cut into thin slices. Cut the slices in half for garnishing. Wash the lime under hot water, grate a little zest and squeeze the juice.
Place the prawns in a bowl. Add 2 tbsp lime juice with salt, pepper, oil and the chilli cubes. Stir to mix.
Cut the avocados in half and remove the stone.
Slightly hollow out some avocado flesh with a spoon to create a larger cavity. Finely dice the flesh. Brush the cut surfaces of the avocados with the remaining lime juice.
Finely dice the mozzarella and add to the prawns together with the diced avocado. Season to taste.
Spoon into the avocados and place on a plate. Serve garnished with salad, chives and lemon slices.
