Wash the radishes and cut them into thin slices.

Step: 2/8

Quarter the melon, deseed and scoop out balls of flesh.

Peel and finely dice the onion.

Step: 4/8

Wash and dry the parsley and arugula.

Step: 5/8

Heat the sesame seeds in a dry pan over medium heat until golden and aromatic, stirring constantly. Remove from the pan and leave to cool.

Peel and finely grate the ginger and squeeze it well with your hand into a bowl. Halve the lime and squeeze the juice.

Step: 7/8

Mix the ginger juice, lime juice, sesame oil, olive oil, soy sauce and chili sauce.

Step: 8/8

Mix the watermelon, radish, arugula, parsley leaves and onion with the dressing. Scatter over cream cheese and sprinkle with sesame seeds.
