Peel the potatoes and cut into 3-4mm thick slices.

Cut the meat into strips or cubes.

Peel and slice the onion.

Place 2 tbsp clarified butter into a hot pan. Add a potato slice (if it sizzles, the fat is hot enough).

Add the remaining potatoes to the pan and fry for 4-5 minutes until golden brown. Turn and fry until the other side is golden brown.

Add the onion.

Step: 7/10
Add the onion and meat and fry together for about 5 minutes.

Step: 8/10
Season with salt and pepper.

Step: 9/10
Grind the pepper.

Step: 10/10
Season with caraway to taste.
