Peel and roughly chop the potatoes.

Step: 2/6

Heat the oil in a non-stick pan and add the chopped potatoes, 2 tbsp at a time. Press to flatten into potato rösti cakes and fry over a medim heat for 4-5 minutes on each side until golden brown.

Meanwhile, wash the herbs, shake dry and chop finely.

Step: 4/6

Wash, core and quarter the apple, and cut into thin slices.

Step: 5/6

Mix the herbs and apple pieces with the curd and season with salt and pepper.

Step: 6/6

Drain the fried rösti on kitchen paper and serve with the apple and herb curd.
