Preparation
Arrange the ingredients for use.
Sieve the flour into a bowl.
Place the eggs in a bowl. Add salt, some nutmeg and 150ml water and stir to combine.
Add the flour and stir in.
Beat well with a whisk until bubbles start to form on the surface.
The dough should drop thickly from the spoon.
Half-fill a wide pot with water and bring to the boil. Salt the boiling water. Place a späetzle press on the side of the pan and fill with a spoonful of dough. Press the spaetzle into the pan and boil for 1-2 minutes until they float to the surface.
Remove the finished spaetzle with a slotted spoon and drain.
Repeat until the dough is all used up.
