Prepare all the ingredients.

Peel the mango, cut the flesh away from the stone and finely dice.

Wash the tomatoes, halve, deseed and cut into small cubes.

Wash the spring onions and cut into fine rings.

Step: 5/7

Wash and halve the chillies, deseed and cut into fine strips.

Peel and finely dice the garlic and ginger.

Step: 7/7

Mix the mango, tomatoes, spring onions, chillies, ginger and garlic in a bowl with the olive oil, lemon juice, salt and pepper. Wash and shake dry the coriander and coarsely chop the leaves. Add to the salsa, season to taste and serve.
