Preparation
Wash the potatoes and cook them in boiling salted water for 15-20 minutes. Then drain, rinse under cold water, peel and leave to cool. Cut the cooled potatoes into slices.

Peel the onion and slice into rings.

Wash the cherry tomatoes, pat dry and cut in half.

Wash and clean the sorrel, dry and cut into fine strips.

Clean the prawns, then wash pat dry and season with salt, pepper and chilli. Heat 1 tbsp oil in a frying pan, fry the prawns over a medium heat for 2 minutes. Remove from the pan.

Heat the remaining oil in the pan and fry the potatoes and onion rings, turning frequently, for about 5 minutes.

Add the tomatoes, fry for 1 minute and season with salt and pepper.

Add the prawns to the potatoes and heat briefly. Mix in the sorrel and serve immediately.
