Preparation
Prepare all the ingredients.
Peel and finely chop the onion.
Wash the mint, pat dry and finely chop the leaves.
Peel and finely dice the ginger.
Wash the raspberries, pat dry and cut into strips.
Wash the wild strawberries, drain well or pat dry and halve them.
Finely dice the smoked salmon.
Grate the lime zest and squeeze the juice.
Sprinkle the smoked salmon with a little lime juice and let it stand briefly.
Put the salmon in a bowl.
Add the rest of the ingredients and mix everything carefully. Season the salmon mix with soy sauce, salt, pepper and maple syrup, and chill for 2 hours.
Serve the salmon garnished with mint leaves.
