Separate the eggs.

Stir the flour together with the salt and milk. Mix in the egg yolks and 40g sugar.

Whisk the egg whites with a pinch of salt until soft peaks and gradually beat in the remaining sugar.

Gently fold the egg whites into the batter.

Cook 4 pancakes at a time in a little hot butter in a pan. Spoon the batter into the pan with a ladle, cook until golden brown for 1-2 minutes and turn. Cook until golden brown on the other side and remove from the pan. Repeat until all the batter is used and serve sprinkled with icing sugar.
