Preparation
Wash the rocket and shake dry. Tear or cut into bite-size pieces.
Wash the tomatoes on the vine and drain well.
Squeeze 1 tsp lemon juice. Wash the rosemary and shake dry. Pluck the needles, chop them and mix with the olive oil and lemon juice.
Trim the meat. Heat the oil in a pan. Fry the steak over a very high heat until browned on both sides.
Remove the steak from the pan, wrap it in foil and allow to rest for 5 minutes.
Meanwhile, place the tomatoes in the pan and fry over a medium heat for 2 minutes.
Remove the meat from the foil and slice it diagonally. Place the steak slices on a baking tray and drizzle over the rosemary oil mixture. Sprinkle with salt and pepper.
Place the tomatoes on the steak and bake in the preheated oven at 240°C (220°C fan, gas 8) for 5 minutes. Remove from the oven and serve with rocket.
