Preparation

Prepare all the ingredients. Pat dry the prawns.

Peel and thinly slice the garlic.
Step: 3/9
Peel the ginger and cut into 2-3 slices.

Peel off a strip of lemon zest. Halve the fruit and squeeze half the juice.

Wash the chillies and cut into rings.

Heat 3-4 tbsp oil in a pan. Add the garlic, ginger, lemon zest and hot chilli. Fry briefly and remove from the heat. Add 2 tbsp lemon juice and set aside.

Pour the remaining oil into a hot pan and saute the prawns over a medium heat for 2-3 minutes.

Turn and cook until done.

Season with salt and arrange on a warm bowl or plate. Season with the aromatic garlic-lemon oil and serve.
