Preparation
Peel the prawns up to the tail, devein, wash well and pat dry.

Wash the chillies, halve lengthwise and cut into strips.

Cut the halves into strips.

Peel and slice the garlic.

Wash the lemon and cut into slices.

Tear the herbs roughly, wash and drain on kitchen paper.

Heat the olive oil in a hot pan.

Saute the herbs, chilli and garlic until aromatic.

Remove the aromatics from the pan, but leave the oil. Drain the aromatics on kitchen paper.

Season the prawns with salt and pepper, and toss in some flour.

Pat off the excess flour and place the prawns in the hot oil. Cook for 1-2 minutes on each side until golden.

Add the lemon slices, fried herbs, garlic and chilli and serve.
