Wash the chives, shake dry and cut into 2cm lengths.

Wash the courgettes and thinly slice lengthways.

Step: 3/7

Sprinkle the courgettes with a little salt and leave to stand for 5 minutes.

Meanwhile cut the feta cheese into long sticks.

Pat the courgettes dry and place 2-3 slices slightly overlapping each other for each roll (you will make 16 rolls in total).

Spread the courgette slices with 1 teaspoon ajvar (hot pepper relish) and cover with feta cheese. Roll up the courgette slices and secure with cocktail sticks.

Step: 7/7

Place the courgette rolls in a baking dish, drizzle with oil and grill under a hot grill for 5-8 minutes. Sprinkle with chives and serve.
