Preparation

Place the spices in a blender and blitz with the oil.

Place the meat in a shallow bowl.

Spread the meat with the marinade, cover and marinate in the fridge for about 1 hour.

Meanwhile, prepare the salsa. Wash the tomatoes, remove the stalk and finely dice.

Peel and finely chop the shallot.

Add the tomatoes, shallot and capers to a bowl and mix with the vinegar, oil, sugar and pepper.

Heat some oil in a pan.

Add the meat and fry for 30-50 seconds each side to seal.

Sear for approximately 30 seconds on each side.

Cover the meat and keep warm.

Season the salsa with a pinch of cinnamon. If necessary, add some salt. Fold the meat and secure with skewers. Serve with the salsa.
