Juice the lemon. Mix 2 tbsp lemon juice with the oats, cranberries and apple juice and leave to soak for 1 hour.

Coarsely chop the walnuts and toast in a dry pan until they release their aroma. Remove the nuts and set aside to cool.

Mix the maple syrup with the cream cheese, yogurt and cinnamon.

Wash the pears, core and cut into fine sticks.

Mix all ingredients well and divide between bowls. Serve with berries, bananas or tropical fruits and garnish with mint.
